If the use of mathematics as an adjunct to religion falls within your interest, then please consult ARCHIVUM FRANCISCANUM HISTORICUM, 1982-84. Within that time frame (I don't have a copy of the articles before me), two lengthy articles appeared. The first illustrates how the great theologians (Bonaventure, Duns Scotus, and others) used mathematics to bolster their theological arguments; the second list Franciscans from the earliest times to 1821 who wrote on mathematics.
