The OED gives "quark" as "[a] type of soft, unripened cow's milk cheese of German origin, with a low fat content and smooth texture" with an American citation from 1903 & a British one from 1931.
So it's *possible* that Joyce had heard of the dairy product. (But I wouldn't bet on it.)
