Plot3D[Sin[u v], {u, 0, 3}, {v, 0, 3},
AxesLabel ->
(Style[#, Bold, 16] & /@
{"x", "y", "z"})]

You can use spaces or line feeds

Plot3D[Sin[u v], {u, 0, 3}, {v, 0, 3},
AxesLabel ->
(Style[#, Bold, 16] & /@
{"\nx", " y", "z "})]
