one way:

----------------------------
clear all
x=3.257;
digits(3); x=double(vpa(x,3))

x =
3.2600

EDU>> class(x)

double
-----------------------

or

-----------------------------
clear all; x=3.257; round(x*100)/100

ans =
3.2600

EDU>> class(ans)

double
----------------------------
