I'd suggest you have a look at 3 possibilities, all from AP Stats author teams:
1) Stats In Your World (Bock & Mariano: a cousin of Stats:Modeling the World, aka BVD)
2) Statistics Through Applications (Starnes)
3) Statistical Reasoning in Sports (Tabor)

Glad to hear even more students will be taking Statistics!
