Broadens? How exactly do you broaden on something you didn't even teach? He isn't even trying to tie this activity to the quadratic function let alone the reasoning behind that function. No one is fitting anything to a quadratic function here. They are fitting a poorly thought out activity to a curved line on a piece of paper. How can anyone be gaining an understanding of ax^2+bx+c = 0 through this activity?

Algebra avoidance has been pretty well documented on math-teach.
