font name of labels in a figure

Dear All,

With MATLAB the default font of labels in an exported
EPS figures is always Helvetica. Is there any way to
change it to something like Arial?

I sometimes have to use Adobe Illustrator to edit my EPS
figures, but Illustrator does not have Helvetica. It causes
my figures to use different label fonts. What shall I do?
