Polynomial and special function a question

I define P(x-a):= product(x-a, a = 1 .. N)
The program Maple (11) as it parses it give me the following formula
(-1)^N*GAMMA(N+1-x)/GAMMA(1-x)
Since the definition means veru simply a polinomial trhough natural number in x such as x^n +p1 x^(n-1) + ...
I wonder why and wath is the meaning of the expression in special functions
