Control charts, as Bob Hayden said, form an excellent application of statistics,
either from the data analysis or inference perspective. The ideas inherent
in their construction and use are part of the AP course description, even though
they are not listed as a separate topic. So, they could be used as an
interesting application of statistics in an AP course, but do not get too
carried away with the peculiarities that you might find in an industrial
QC manual.
