Thank You. Yes, now I've learned the way imagesc works.
Interpolating "z" to a rectangular grid before using imagesc .... that is the way I anticipated (but hoped I could avoid) I would have to go.

So there is no other already predefined way (with a single command) to create a color bitmap of irregular xyz-data with x,y being vectors and z being a 2-dim data-field ?
