recommendation on survey sampling for workplaces

Hello. I need help. I am doing a study on employment
sturucture(age, education, sex, duration of working, and such things
of empylees) of otels in a region. I have to make survey with
employees. My time and opportuinites are limited. But on the other
side, I have to make good sampling which mirros the population as good
as it is possible. Initiaaly, I just have the numbers of otels
according to categories( 1 star hotel, 2 star hotel, ....). I need
help for the method of sampling. If you recomend me methods for
sampling , I will be very glad. Thanks a lot.
