I would like to have a multidimensional array with an index running
from -5 to 5, for example.

You might like to try using Table instead of Array.

Table[f[i,j],{i,-3,2},{j,-2,1}]//MatrixForm

f[-3, -2] f[-3, -1] f[-3, 0] f[-3, 1]

f[-2, -2] f[-2, -1] f[-2, 0] f[-2, 1]

f[-1, -2] f[-1, -1] f[-1, 0] f[-1, 1]

f[0, -2] f[0, -1] f[0, 0] f[0, 1]

f[1, -2] f[1, -1] f[1, 0] f[1, 1]

f[2, -2] f[2, -1] f[2, 0] f[2, 1]
