Subsampling a matrix

Hello! I would like to simulate the effects introduced by finite sampling of an image.
To do this I compute a very large matrix with a large number of elements.
Then I want to subsample it to the actual pixel size of my "sensor".
Which way would you reccomend to do this?
I would think that I should be summing all the values of the element in my "HI-RES" matrix that go in one element of my new "LO-RES" matrix.
Am I correct?
If so... Is there a matlab function to do this?
