I assume that you saved it from the Figure Window? Then it is scaled to the resolution of your diplay. Better use

imshow(myimage)
imwrite(myimage,'myimage.tif','tif')

to save it as a TIFF file with commands from the Image Processing Toolbox. From the Figure Window you can also print in any resolution you want using PRINT, for example, as a JPEG

print -djpeg70 -r600 myimage.jpg

without commands from the Image Processing Toolbox with as a 70% JPEG with 600 dpi resolution.
