Info for everyone. I asked the official matlab Support also for that:

"This is expected behavior when working with an UITABLE with editable cells. After selecting a cell, clicking somewhere outside of this cell will only end "edit mode" and fire the CellEditCallback if applicable. Therefore, you will not be able to push a pushbutton with this same single click.

There are no workarounds for this limitation. "

That is a very unsatisfying behavior.
