For this example, yo can do

Apply[And, (x[#] >= 0) & /@ Range[5]]

For example,

Assuming[(x[#] >= 0) & /@ Range[5], Simplify[Sqrt[x[2]^2]]]

On the other hand, AFAIK patterns do not work in this situation.
