Processing camera photos in real time

Hello

I have a BASLER AS01f-2 camera that will be continuously taking photos of an irradiated gas of super cold atoms.

The images obtained are in shades of gray, and I want to turn them into colored images, where the color is dependant on the gray intensity (white=red, black=blue). I already devised a MATLAB program to do that.

My problem is that this program only processes one image at a time.

Would there be any way to get a cycle where the MATLAB program continuously picks up new gray scale images as they're stored in the computer's hard drive, producing new colored images? Also, that program would need to somehow delete or overwrite older images, so it can keep working without completely filling up the computer's hard drive.
