It is not clear to me whether you want only results that are Real to be displayed at that precision or all reals in an expression. Use one of the following
$Post = If[Head[#]===Real,SetPrecision[#,17],#]&;
.1+.2
0.30000000000000004
1/3. E^(Pi x)
0.333333 E^(\[Pi] x)
%//N
0.333333 2.71828^(3.14159 x)
$Post = (# /. x_Real:>SetPrecision[x,17])&;
.1+.2
0.30000000000000004
1/3. E^(Pi x)
0.33333333333333331 E^(\[Pi] x)
%//N
0.33333333333333331 2.7182818284590451^(3.1415926535897931 x)
