IBM and Mac Software

I have an urgent request.
I will be working at a new Coaltion of Essential School which will be opening up in Sept of 1995 with 7th and 8th graders and will eventually be a 7-12 school. We will have an integrated curriculum, performance based assessment, project oriented-problem driven curriculum, etc.
State of the art technology will be a major component of the learning environment. We are presently in the midst of deciding on a computer platform and wish this decision to be driven by the software which will be integrated into our curriculum.
In the interest of gathering information for these curricular decisions, my request is this:
Is there a central resource that would provide guidance to the best available educational software on the market (IBM and Mac's)? I would appreciate knowing about software for use in all disciplines, not simply mathematics?
Does anyone presently use software which they would recommend? If so, what is it, why do you recommend it, and which platform(s) does it run on?
I know about Sketchpad which is available for both IBM's and Macs!!
