Last value deviates from regression line?

We have a problem with a geological background:
In a tunnel during construction, the temperature of the inleaking water
will be measured at intervals. It is expected that the temperature will be
slowly and more or less linearily increasing as the tunnel progresses. A
faster change in water temperature,to either direction is a signal of
danger.
A suitable method to determine whether the last value observed really
deviates from the observed series or if it is just measurement noise?
