Both Cuisinarie-Dale Seymour and Creative Teaching catalogs have many examples of manipulations that can be used in teaching fractions. Fraction tiles come immediate to my mind. Along with these manipulations are books with lesson plans. The journal: Mathematics Teaching in the Middle School has ideas of using manipulations as well.
