I am sure the most common curve sketching tool used in middle schools and high schools is the graphing calculator. High schools may also use Best Grapher (Venture Publishing), Maple, Derive, and packages that come with some of the textbooks. These graphers do not, however, guide students through an analysis of a function. -Pat, for the Teacher2Teacher service
