Job Choice

Hey all, I had my first interview today, it sounds promising. The interviewer mentioned though that he is leaving for vacation soon and he will hire someone this week! While this sounds like an awesome thing, what about holding out for other schools? I have another interview tomorrow but aside from that should I take what I can get or risk waiting something else out? I don't want to accept this one and then tell them I'm going somewhere else. I don't need to burn bridges this early in the game.
The school is in a semi-rural area which is what I want and they are also building a completely new school in the next three years. I was told they are moving into the new school not just adding it to the district. The pay isn't what I expected, but it's not too bad. They also mentioned they just signed a new three year contract.
What do you guys think?
