Statistics Projects

Does anyone use major projects as part of your course requirements? I would
be interested in hearing from you on how you organize your effort. I have
attempted to do it but have problems getting it organized. Next year I am
thinking of doing sampling and experimental design much earlier in the
course and have the students pick a project early. What do you do?
