Jon, I have always liked topics using geometric probability. The reason it seems a bit more interesting for the kids is that it is possible to start with a very basic problem (darts or coin toss) and build it up just by changing the figures or the rules a bit. There is an NCTM publication on this topic that could get you started. Good luck. Rick
